Umeboshi & Furikake Onigiri (sour plum & seaweed)

Lightly sour and umami rich rice balls.

This onigiri is ready in 5min if you have cooked sushi rice at hand! Made with only 3 ingredients: sushi rice, umeboshi (sour / pickled plum) and furikake (seasoning composed of nori and toasted sesame seeds). This recipe makes 4 onigiri, great for breakfast, snack or as a side in a meal. Note: Furikake often contains dried fish, find a vegetarian version or make your own.

Serves: 2 | Time: 5 min (+ 20min if making the rice)

Ingredients

  • 1 cup cooked sushi rice
  • 4 umeboshi plums, finely chopped
  • 2 tbsp furikake

Method

  1. If needed, cook rice to packet instructions.
  2. Pit and finely chop umeboshi.
  3. Mix all ingredients together and form 4 balls (lightly wet your hands to keep the rice from sticking to them).
