Pêches au Thon (Peach and Tuna Salad)

Classic Belgian pairing

This Belgian pairing may seem intriguing at first (to say the least), but the sweet peaches perfectly balance out the creamy brininess of the tuna salad. A match made in a strange heaven. Very easy recipe.

Ingredients

  • 1, 160g can of tuna (5.5oz)
  • 1/4 cup of mayo (4 tbsp)
  • 2 half peaches in syrup (half of a 410g | 15oz can), sliced
  • 75g salad leaves of choice (2.5oz)
  • 1 large carrot, julienned
  • Bread, to serve

Method

  1. Make the tuna salad: mix tuna and mayo in bowl.
  2. Julienne carrot with a julienne peeler or knife.
  3. Cut each half peach into 6 slices.
  4. Assemble: lettuce, carrots, peaches, tuna salad.
