Quick and easy mid-week hack
Flavourful and vegetable rich, this recipe further simplifies my Miso Tahini Soba Noodles, using cupboard ingredients for a creamy upgrade to your instant noodles in under 10min | 3 core ingredients (instant noodles, miso, tahini).

Ingredients
- 1 small shallot/ onion, finely diced + 1 tsp oil (optional)
- 1 heap tsp miso
- 1 heap tsp tahini
- 2 packs instant noodles (noodles only)
- 1 carrot, julienned
- 1 courgette, julienned
- Topping (optional): Sesame oil drizzle, sesame seeds
Method
- Prepare the vegetables: finely dice the shallot/onion (if using), julienne carrot and courgette.
- If using sauté shallot in oil over medium heat in a saucepan big enough to fit 2 packets of instant noodles.
- Add miso and tahini to the saucepan, mix well.
- Slowly add 500ml (~2cups) of boiling water whilst mixing to combine well.
- Add instant noodles (noodles only) and carrots.
- When noodles are ready (1 to 2min), add courgette and serve!
Substitutions
Core: Miso, tahini and instant noodles.
Substitutions: All the other ingredients are optional. Use whatever vegetables you have at hand (mushrooms, sweetcorn, etc.).
