Tuna Wonton Nachos

All the fun and crunch of nachos with Japanese influences

Crunchy, creamy, sweet, spicy… this dish has it all! Bonus: it is simple to make, just fry some wonton skins, the rest is only chopping.

Makes: 1 small oven tray | Time: 30 to 40 min

Ingredients

For the tuna

  • 1 sushi grade tuna steak
  • 1 tsp soy sauce (optional)

Other ingredients

  • Wonton wrappers (about 100g | 7oz)
  • 1 small avocado
  • Sweet soy sauce (or make your own*)
  • Mayo (preferably Kewpie)
  • Sriracha
  • Toasted seasme seeds
  • Nori flakes (optional. I just blits a sheet of nori in the food processor / spice grinder)
  • Lime juice (optional – to stop avocado from browning)
  • Spring onion (scallion)
  • Oil for frying

Sweet soy: 50% sugar / 50% soy sauce. In a saucepan over medium heat, dissolve 1/4 cup of sugar in 1/4 cup of soy sauce. Monitor closely. I like to add a thumb of fresh ginger that I let infuse in the soy-sugar mix and remove just before serving.

Method

Make the wontons

  1. Slice each wonton wrapper on the diagonal twice, creating 4 triangles.
  2. Working in batches, fry wrappers, flipping halfway through, until the chips have puffed up and turn a pale golden colour, 1 min 30 to 2 minutes.
  3. With tongs or a slotted spoon, transfer chips to a paper towel-lined plate; season with a pinch of salt. Repeat with the remaining wrappers.

Prepare the toppings

  1. Cut the tuna in cubes. Mix in the tbsp of soy sauce for extra flavour (optional). Set aside for later.
  2. Dice the avocado. Squeeze lime juice over to stop browning (optional). Set aside.
  3. Slice spring onion, green and light green parts only.

Assemble

  1. Layer wonton crips on a tray.
  2. Drizzles over the sauces: mayo, sweet soy, sriracha.
  3. Add toppings trying to evenly cover the dish: tuna, avocado, sesame seeds, nori, spring onion.
  4. Enjoy!
