A dash of lime juice brightens up this comforting lemongrass sweet potato soup. A simple vibrant coriander chutney further deepens the flavour.

Ingredients
For the soup
- 1 tbsp olive oil
- 1 small onion
- 1 large garlic clove
- a thumb of ginger
- 2 lemongrass stalks
- 2 orange sweet potatoes (about 600g | 1.3lb)
- 200ml coconut milk
- 150ml chicken or vegetable bouillon
- 1/2 lime juice only

For the coriander chutney (optional)*
- 10g coriander (0.3oz | leaves & stems)
- a small thumb of ginger
- 1/4 to 1/2 tsp chili flakes
- 1/2 lime juice only
- 1/8 tsp sugar any
- 1 tbsp olive oil
- Pinch of salt

(*) You can skip the coriander chutney altogether or replace with fresh coriander leaves.
Method
Make the soup
- Pre-heat olive oil in a sauce pan over medium heat.
- Peal and roughly chop onion and potatoes.
- Finely dice garlic, ginger and lemongrass (outer leaves removed).
- Add onions to the pan and cook until soft and translucent (approx. 5min). Stir occasionally, the onions should not brown.
- Add ginger, garlic and lemongrass. Fry until fragrants (approx. 2min).
- Add sweet potatoes and coat well.
- Add broth and coconut milk. If needed add extra water to cover the potatoes.
- Bring to a boil and simmer for 20min or until the potatoes are soft.
- Blend, add juice of half a lime. If you want to thin out the soup add water. To thicken return to heat and reduce.
Make the coriander chutney (whilst the soup is cooking)
- Blend all chutney ingredients together. Adjust seasoning to taste.
Serve
- Serve soup with a dollop of chutney on top (if using).
