French Scrambled Eggs (Soft Scramble)

Soft and creamy scrambled eggs

Everyone likes their eggs differently. For me nothing beats creamy soft scrambled eggs. It may take a few more minutes than a quick scramble but man is it worth the wait. Serve with bread and a side salad and you still have lunch/ brunch ready in under 30min.

Recipe

Serves: 2 | Time: 15 to 20 min

Ingredients

  • 6 fresh eggs
  • Knob of butter
  • Salt

Method

  • Whisk eggs in a saucepan off the heat, do not season yet.
  • Gently heat over low heat, stirring slowly and almost constantly with a spatula. The slow stir will allow for larger ribbons of curds to form whilst keeping the mixture light and creamy.
  • Once the eggs reach a creamy consistency (see picture – curds start to form but the mix remains mostly soft) add butter and a generous pinch of salt.
  • Remove from heat and finish bringing to desired consistency. Adjust seasoning and serve immediately.
