Simple caramelised onion recipe, all you need is a bit of time to bring out the sweetness of the onions. Perfect addition to a cheese board, grilled cheese or burger.

Makes: about 1/4 cup | Time: 1h
Ingredients
- 350g red onions (12oz), sliced 1/4in thick (about 0.5cm)
- 1 tbsp olive oil, or olive oil and butter
- Generous pinch of salt
- 2 tsp cider vinegar
- 1.5 tsp brown sugar
- or replace cider vinegar and brown sugar with 1.5 tbsp balsamic vinegar
Method
- Slice onions in 1/4in thick slices (0.5cm).
- In a cold pan, add olive oil and onions. Mix well to coat the onions in oil.
- Cook over low heat for 45min, mixing every once in a while (every 15 minutes to start then more frequently as the water cooks out of the onions).
- After 45min, add a generous pinch of salt, 2 tsp cider vinegar and 1.5 tsp sugar (or 1.5 tbsp balsamic vinegar). Mix well.
- Cook for another 15min.
- Remove from heat and serve with your favourite cheeses.
