Caramelised Red Onions

Simple caramelised onion recipe, all you need is a bit of time to bring out the sweetness of the onions. Perfect addition to a cheese board, grilled cheese or burger.

Makes: about 1/4 cup | Time: 1h

Ingredients

  • 350g red onions (12oz), sliced 1/4in thick (about 0.5cm)
  • 1 tbsp olive oil, or olive oil and butter
  • Generous pinch of salt
  • 2 tsp cider vinegar
  • 1.5 tsp brown sugar
  • or replace cider vinegar and brown sugar with 1.5 tbsp balsamic vinegar

Method

  1. Slice onions in 1/4in thick slices (0.5cm).
  2. In a cold pan, add olive oil and onions. Mix well to coat the onions in oil.
  3. Cook over low heat for 45min, mixing every once in a while (every 15 minutes to start then more frequently as the water cooks out of the onions).
  4. After 45min, add a generous pinch of salt, 2 tsp cider vinegar and 1.5 tsp sugar (or 1.5 tbsp balsamic vinegar). Mix well.
  5. Cook for another 15min.
  6. Remove from heat and serve with your favourite cheeses.
