This recipe relies on simple elements assembled into a hearty brunch or dinner. Meat, eggs, potatoes, and vegetables come together with light Tex-Mex influences.

Ingredients
- 200g potatoes (preferably fingerling)
- 4 eggs, soft boiled
- 100g spam, diced
- 1 avocado
- Fresh or frozen spinach
- Hot sauce or ketchup
- Salt
- Oil for frying
Method
- Cook potatoes (15 to 20 min):
- Clean and halve potatoes.
- Place in a saucepan with cold water seasoned with salt, bring to a boil and cook until just cooked through (4 to 5 min).
- Drain potatoes, and pan fry until golden (about 5 min on medium heat).
- Cook eggs: cook eggs (from room temperature) for 6min in boiling water. Drain and run under cold water to stop the cooking process.
- Cook spam: dice spam and pan fry in a dash of oil over medium-high heat until lightly browned (<5min).
- Cook spinach: Sauté in a dash of oil or boil spinach. Season with salt.
- Slice avocado.
- Assemble: Peel eggs, and assemble all elements across 2 bowls. Top with your favourite hot sauce (we used Valentina Hot sauce here).
- Enjoy!
