Meat and potato breakfast bowl

This recipe relies on simple elements assembled into a hearty brunch or dinner. Meat, eggs, potatoes, and vegetables come together with light Tex-Mex influences.

Ingredients

  • 200g potatoes (preferably fingerling)
  • 4 eggs, soft boiled
  • 100g spam, diced
  • 1 avocado
  • Fresh or frozen spinach
  • Hot sauce or ketchup
  • Salt
  • Oil for frying

Method

  1. Cook potatoes (15 to 20 min):
    • Clean and halve potatoes.
    • Place in a saucepan with cold water seasoned with salt, bring to a boil and cook until just cooked through (4 to 5 min).
    • Drain potatoes, and pan fry until golden (about 5 min on medium heat).
  2. Cook eggs: cook eggs (from room temperature) for 6min in boiling water. Drain and run under cold water to stop the cooking process.
  3. Cook spam: dice spam and pan fry in a dash of oil over medium-high heat until lightly browned (<5min).
  4. Cook spinach: Sauté in a dash of oil or boil spinach. Season with salt.
  5. Slice avocado.
  6. Assemble: Peel eggs, and assemble all elements across 2 bowls. Top with your favourite hot sauce (we used Valentina Hot sauce here).
  7. Enjoy!
