Delicious and deeply savoury steak tartar for all the (raw) meat lovers! This very simple recipe does require a bit of planning as you need 24h to cure the egg yolks. With that said it takes minimal effort and no cooking (total prep time under 10min). Serve with thin rice crackers or crispy fried sushi rice.

Ingredients
The tartar
- 300g tartar grade minced beef, or 300g fresh flat iron, ribeye, filet chopped very fine (~10oz)
- 1 tbsp egg curing liquid (soy-mirin mix)
- 2 egg cured egg yolks
- 1 spring onion
- Toasted sesame seeds (a generous sprinkle)

Soy cured egg yolks
- 2 eggs (yolks only)
- 4 tbsp soy sauce
- 1 tbsp mirin
Use enough mirin and soy (keeping the same ratio) to just reach the top of the yolks.

Method
Make the soy cured egg yolk (24h ahead)
- Mix soy and mirin in a small container/ jar (ideally a small flat bottomed recipient so the yolks don’t fall to the center and squeeze against each other).
- Separate egg yolk from white and add to the marinade.
- Gently place a piece of clean paper towel on top of the yolks. It should just touch the yolks. This will ensure that the top of the yolks also cures.
- Cover and marinate between 6h and 3 days. The longer the firmer the egg will be. The yolk pictured above or to the right is cured 24h.
Make the tartar
- If using whole steak, chop into very small pieces. If using tartar grade minced beef skip to the next step.
- Add 1 tbsp of the egg curing liquid (soy*mirin) to the beef and mix well.
- Portion the beef out in two even circles onto 2 plates. Make a small dip in the center of each beef mounds with the back of a spoon.
- With a spoon, gently scoop a cured egg yolk and place in the dip you made in the beef. Repeat with the second egg yolk.
- Slice a spring onion (greens only).
- Generously sprinkle spring onion and toasted sesame seeds over each serve of tartar.
- Serve with thin rice crackers or crispy fried sushi rice.
