Creamy cold ramen, perfect for a fresh summer meal. Egg noodles are coated in a tangy sauce and topped with ham, cheese, corn and cucumber. Creamy mayonnaise and savoury mustard round out the dish to make for a light comforting bowl. Ready in 15min. Serving suggestion for a large table in substitutions section.

Ingredients
Noodles & toppings
- 2 portions of egg noodles
- 75g (~2.5oz) of diced ham
- 50g (~1.5oz) of cheddar, diced
- 50g | 6tsp of canned sweetcorn
- 1/4 to 1/3 cucumber, julienned
- 2 tsp of mayonnaise
- 2 tsp of mustard (preferable yellow mustard)
Sauce
- 4 tbsp of rice vinegar
- 2 tbsp of soy sauce
- 1 tbsp of sesame oil
- 4 tbsp of water

Method
- Slice the 1/4 cucumber into matchsticks (see pictures 1
& 2). - Lightly salt the cucumber and set aside for later.
- Dice ham and cheddar into small cubes (see ingredients picture above).
- Make the sauce: mix together all the sauce ingredients (4tbsp rice vinegar, 2tbsp soy sauce, 1tbsp sesame oil, 4tbsp water) (picture 3).
- Cook 2 portions of egg noodles to packet instructions. Once ready, drain the noodles and run under cold tap water. Add a light drizzle of sesame oil to keep them from sticking.
- Assemble:
- Split the noodles evenly in two bowls.
- Distribute the toppings evenly over the noodles. Per bowl: 1/2 of the ham, 1/2 of the cheese, 1/2 of the cucumber, 3 tsp of sweetcorn, 1 tsp of mustard, 1 tsp of mayonnaise (if making a big dish for the family, mix the mayo and mustard into the sauce for easy service).
- Pour the sauce evenly into each bowl.
