Fresh potato salad with Dutch influences. Pickled herring is added to boiled potatoes and crunchy cucumber. A sprinkle of fresh dill rounds out this briny potato salad. No need to make a dressing, just use the herring’s pickling liquid! Good to eat straight away or to make ahead. Letting the salad sit in the fridge for a few hours before serving will allows for to potatoes to soak up the delicious pickling liquid.

Ingredients
- 355g (12.5oz) jar of pickled herring (or rollmops), diced (we use the herring, onions and juice)
- 3 medium sized potatoes, boiled and peeled
- 1/2 a cucumber, diced
- Dill, about 3 sprigs of fresh dill, chopped
- Salt

Method
- Place the 3 potatoes in a cold saucepan, cover with water and add a big pinch of salt. Place on high heat and bring to a boil.
- Boil for 15 to 30min (depending on the size of the potatoes). The potatoes are ready when fork tender (the fork goes in easily and the potato slides off it when lifting it out of the water).
- Drain the potatoes, peel and dice into bite size pieces (picture 1).
- Dice the 1/2 cucumber (picture 2).
- Pick the herring out of the jar and dice (picture 3). Do not drain the jar, you will use the liquid to dress the salad!
- Pick out the onions remaining in the bottom of the jar and fine dice (picture 3).
- Mix all ingredients together: potato, cucumber, herring and onion (picture 4).
- Chop some fresh dill (about 3 sprigs) and add to the salad.
- Add 1/4 cup of the herring’s pickling liquid to the salad and mix.
- Serve straight away or let sit for a few hours for the potatoes to soak up the that delicious pickling liquid.
