Seafood Stick and Goat Cheese Salad

Simple salad bringing together seafood sticks (crab sticks), goat cheese and sweetcorn. Deliciously rich, salty and creamy with fresh pops of sweetcorn.

Serves: 2 | Time: <10 min

Ingredients

  • 1/2 head of iceberg lettuce
  • 6 to 8 seafood sticks, sliced
  • 1/2 cup of sweetcorn
  • 100g (3.5oz) of goat cheese, crumbled
  • Balsamic vinaigrette

Method

  1. Rinse and drain the lettuce, tear into bite size pieces.
  2. Slice 6 to 8 seafood sticks (imitation crab stick).
  3. Assemble all ingredients in a bowl: lettuce, crab sticks, sweetcorn, crumbled goat cheese and vinaigrette.
  4. Toss and enjoy!
