Easy Thai Inspired Dumpling Soup

Fragrant and comforting dumpling soup. Very easy to make with your favourite store-bought dumplings! Serves 2 as a starter or light meal. Add more dumplings for a more filling meal or serve with a side of vegetables of choice.

Ingredients

  • 1 tbsp olive oil
  • 4 cloves of garlic
  • 5 cups of water (approx. 1.2L)
  • 1 cube of beef bouillon
  • 1 sage leaf
  • 1 tsp sugar
  • 2 tsp white vinegar
  • 1/4 tsp red pepper flakes (optional)
  • 1 tsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp chopped coriander
  • Frozen dumplings – I use pork and cabbage dumplings, about 6 or 7 per person for a light meal (10/ person for a more filling meal)

Method

  1. Heat 1 tbsp of olive oil (or other neutral oil) in a saucepan over medium heat.
  2. Peel and crush the 4 cloves of garlic with the back of knife. Add to the saucepan and sauté until golden brown (about 2 min per side) – pictures 1 and 2.
  3. Add 5 cups of cold water (1.2L), along with the beef bouillon cube (crumbled) and a sage leaf. Mix and bring to a simmer – pictures 3 and 4.
  4. Add: 1 tsp of sugar, 2 tsp vinegar, 1/4 tsp of red pepper flakes (if using), 1 tsp of soy sauce, 1 tbsp of fish sauce and 1 tbsp of chopped coriander – picture 5. Mix and simmer for 10min.
  5. Add your dumplings and cook to packet instruction or until cooked through (you can add an extra dumpling to pull out as a tester).
  6. Enjoys!
