Crispy and gooey with a bright olive tapenade to bring everything to life

Ingredients
- 4 slices of crusty thick cut bread
- 100g brie (1/4lb)
- Olive tapenade (green or black)
- Fresh basil leaves
- Softened butter or margarine

Method
- Pre-heat pan on medium heat.
- Assemble grilled cheese: spread tapenade on both sides of the bread, add slices of of brie (about 1/4 inch / 1/2 cm thickness), cover with basil leaves. Close sandwich and spread butter (or margarine) on the exterior of the top slice making sure to cover all the surface.
- Place sandwiches in the pan, buttered slice down. Press lightly for full surface contact.
- Butter the remaining exterior slice and cover the pan with a lid. Cook for about 5min or until the bottom slice is golden brown.
- Flip the grilled cheese and cook uncovered for another 5min (or until bottom slice is golden brown).
- Enjoy!
