Creamy grilled cheese with a kick
Jalapeno, cream cheese and bacon come together to transform a classic bar snack into an oh so satisfying dinner. Great served with tomato soup.

Ingredients
- 4 slices of thick cut crusty bread
- 2 bacon strips, diced
- 1/2 cup cream cheese
- 50g cheddar (1/2 cup), grated
- 2 to 3 tbsp pickled Jalapeno slices
- 1/4 tsp garlic powder
- Pinch of salt
- Softened butter or margarine

Method
- Chop bacon strips and pan fry over medium-low heat for 5min or until crispy. Drain on paper towel.
- Meanwhile, chop the pickled jalapeno. Use 2 tbsp of sliced jalapeno for a milder mix, and 3 tbsp for a spicier mix.
- In a bowl, mix: cream cheese, cheddar, jalapeno, garlic powder and salt.
- Spread cheese mix on 2 slices of bread. Top with bacon bits and close sandwich.
- Spread butter on the exterior of the top slice of bread.
- Place sandwiches in a medium-hot pan, buttered slice down. Cook 5min covered or until the bottom slice is golden brown.
- Flip and cook another 5min uncovered.
- Serve and enjoy!
