I am already looking forward to the next time I will sink my teeth into this delicious and hearty burrito. Rather than a recipe this is more of a guideline to assemble my favourite burrito with links to components from other recipes. You can buy components off the shelf (e.g. refried beans) or make your own. Enjoy!
Recipe
Time will depend on what you make yourself or buy ready made. Warming up and assembling will take under 10 min with all components made.
Ingredients
Warm ingredients
- Tortilla wraps (the larger the better)
- Refried beans
- Coriander-lime brown rice
- Carnitas (braised pork)
Cold ingredients
- Cheddar, shredded
- Iceberg lettuce, shredded
- Sweetcorn
- Pico de gallo
- Chipotle sour cream or regular sour cream
- Pickled jalapeno (optional)
- Guacamole (optional)
- Hot sauce of choice (optional but recommended!)

Method
- Warm ingredients that need warming up.
- Grated cheddar, shred lettuce.
- Assemble ingredients to taste in the order they appear in the ingredients list (I usually don’t add guac to mine but my husband loves it).
- Enjoy!
Substitutions
I highlight here the core of the dish and suggest some possible substitutions to adapt the burrito to your preferences, diet and ingredients available to you.
Core: Tortilla wrap, rice.
Substitutions: Burritos are very flexible and you can add, remove and replace components as you like. Some ideas below:
| Recipe components | Possible substitutions* |
| Pork carnitas | • Pulled chicken • Beef • Vegetarian: sauteed peppers (pepper strips sautéed with taco seasoning) |
| Pico de gallo | Salsa |
| Refried beans | Whole beans (pinto, black or kidney) |
| Guacamole | Sliced avocado |
| Other additions | • Crumbled tortilla chips for extra crunch |
