Buttery Prawn “Lobster” Roll

Warm and buttery prawn roll

This is a simple take on a Connecticut style lobster roll. Here, juicy prawns are tossed in butter with a dash of lemon juice and nestled warm in soft and buttery toasted buns. Serve with a cold beer or glass of wine and you have a perfect backyard bite for a sunny day!

Ingredients

  • 200g uncooked prawns, peeled or not
  • 2 tbsp butter + extra to toast buns
  • 1/2 tsp lemon juice, or to taste
  • Salt
  • 4 hot dog buns, opened at the top
  • Chives, to top

Method

Cook the prawns

  1. Bring a large pot of water to a boil, season heavily with salt (it should roughly taste like the ocean).
  2. Add prawns (peel on if using unpeeled prawns) and cook for about 2min, until they turn pink and are fully cooked through. Keep a close eye on them, they should just start to curl on themselves but not close up. You can take a tester prawn out, if the inside is still translucent cook a little longer.
  3. Drain prawns and place in an ice bath or run cold water over to stop the cooking process.
  4. If applicable peel prawns.
  5. Cut prawns in half.

Prepare the buns

Whilst you wait for the water for the prawns to boil, you can get started on the buns.

  1. With a sharp knife, shave a thin layer off the sides of the buns (see picture 1).
  2. Cut a slit in the top of the bun making sure to keep the bottom attached (you will stuff the bun from the top as seen in the recipe picture).
  3. Butter the sides of the bun, and toast in a pan (picture 1) until each side is golden brown.

Butter and assemble

  1. Melt 2 tbsp butter in the microwave.
  2. Add lemon and a pinch of salt. Taste and adjust seasoning to taste.
  3. Toss prawns in the warm butter sauce.
  4. Divide the prawns evenly in your buttered roll.
  5. Sprinkle with chives.
  6. Enjoy!
