Courgette, tomato and goat cheese come together in this Mediterranean inspired flammkuchen (thin cream based pizza from eastern France). Delicious and moreish, great for a summer lunch or picnic.

Ingredients
For the dough
- 1 flammkuchen dough (or pizza dough, rolled thin)
For the cream base
- 1/4 cup crème fraiche / heavy cream
- 1/8 tsp salt
- 1/4 tsp garlic powder
- 15 leaves fresh basil, chopped
For the toppings
- 1/4 cup diced and deseeded courgette/ zucchini (~1/2 courgette)
- 1/4 cup diced and deseeded tomato (~1.5 tomato)
- 1/4 diced chopped goat cheese
- 2 tsp olive oil
- Salt
Additional
- Extra basil to serve (optional)

Method
- Pre-heat oven to 220°C (420°F).
- Make the cream base
- Fine chop basil.
- In a bowl, mix cream, salt, garlic powder and chopped basil. Set aside for later.
- Prepare the toppings
- Pre-heat 2 tsp of olive oil in a pan over medium-high heat.
- Remove the core of the courgette and cut into small dices (see picture 1).
- Add courgettes to the pan with a pinch of salt, and sauté until the sides start to brown, under 5 min (see picture 2).
- Remove core and seeds from the tomatoes and cut into small dices (picture 2).
- Cut the goat cheese into small dice, similar size as the tomato.
- Cook and assemble
- Roll out the dough. If using pizza dough make sure it is rolled thin.
- Spread the basil cream on the dough, leaving a small 1/4in / 1/2cm clear of cream around the edge.
- Sprinkle courgette, tomato and goats cheese evenly over the cream.
- Cook for 12min (or as recommended to cook for the dough you are using).
- Once ready, sprinkle with freshly torn basil (optional) and serve with a big salad or other side of your choosing.
