Very easy, fresh and herby. Roughly chopped cucumbers are topped with mozzarella and a generous sprinkle of dill. Great salad, to change from the classic lettuce based dishes. Serve family style or plate individually to add that je ne sais quoi.

Ingredients
- 1 cucumber, roughly chopped
- Salt
- 2 fresh mozzarella balls, torn
- Fresh dill, 2 big sprigs
- 1 green onion, greens only, sliced
- Olive oil
- Bread, to serve

Method
- Roughly chop the cucumber into uneven bite size pieces.
- Sprinkle the cucumber with salt and rest for 5 to 30min depending on the time available to you (the longer the better).
- Meanwhile slice the spring onion (greens only).
- Once rested, pat the cucumber with a clean tea towel or paper towel.
- Plate the cucumber (1/2 a cucumber per plate), or place in a bowl to mix and serve family style.
- Tear the mozzarella and add to the cucumber (if plating individually use 1 ball per serve).
- Top with fresh dill, just tear the fronds (leaves) and sprinkle over the cucumber.
- Top with sliced spring onions.
- Add a sprinkle of salt and a drizzle of olive oil.
- Serve with crusty bread and enjoy!
