Simple Avocado Vinaigrette

Very easy and very delicious starter or side. Simply cut an avocado in half and fill the centre with vinaigrette. A French classic!

Ingredients

  • 1 ripe avocado

For the vinaigrette

  • 1/2 tbsp mustard
  • Pinch of salt
  • 3 tbsp red wine vinegar
  • 6 tbsp olive oil
  • Pepper

Method

Make the vinaigrette

I recommend using an empty jar, closing the lid tightly and shaking ingredients to mix. You’ll obtain a homogenous mix in no time. You can also simply mix the ingredients in a bowl.

  1. Mix mustard, vinegar together with a pinch of salt (this ensures that the salt dissolves in the vinegar). If using a jar, just close the jar and shake for a few seconds to combine.
  2. Add olive oil and stir (or shake) until combined.
  3. Add pepper to taste.

Assemble

  1. Cut the avocado in half.
  2. Fill the centre with you homemade vinaigrette.
  3. Enjoy!
