Very easy and very delicious starter or side. Simply cut an avocado in half and fill the centre with vinaigrette. A French classic!

Ingredients
- 1 ripe avocado
For the vinaigrette
- 1/2 tbsp mustard
- Pinch of salt
- 3 tbsp red wine vinegar
- 6 tbsp olive oil
- Pepper

Method
Make the vinaigrette
I recommend using an empty jar, closing the lid tightly and shaking ingredients to mix. You’ll obtain a homogenous mix in no time. You can also simply mix the ingredients in a bowl.
- Mix mustard, vinegar together with a pinch of salt (this ensures that the salt dissolves in the vinegar). If using a jar, just close the jar and shake for a few seconds to combine.
- Add olive oil and stir (or shake) until combined.
- Add pepper to taste.
Assemble
- Cut the avocado in half.
- Fill the centre with you homemade vinaigrette.
- Enjoy!
