All the flavour of buffalo chicken wings in one tasty bite. Shredded chicken is coated in cream cheese and Frank’s Red Hot hot sauce, and tightly wrapped into tortilla wraps with a sprinkle of blue cheese. Perfect for a party platter platter, BBQ or picnic!
Recipe
Makes: 2 rolls / ~24 pinwheels | Time: <3h (20min prep | 30min cook | 2h rest)
Ingredients
- 2 chicken legs (thigh and drumstick), skinless, cooked
- 1/2 to 1 celery stalk (to taste), finely diced
- 1 spring onion, greens and light green, sliced
- 200g (7oz) of cream cheese
- 1 tsp of onion powder
- 3 tbsp of Frank’s Red Hot Original
- Salt, to taste
- 2 tortilla wraps
- 30g blue cheese, crumbled

Method
- If needed, remove the chicken’s skin.
- Place the chicken in a sauce pan and cover with water (picture 1). Add a sprinkle of salt and bring to a slow boil over high heat. Turn the heat down and simmer for 30min or until cooked through.
- Drain and cool until easy to handle. Shred with a fork or by hand (if by hand be careful if the chicken is still hot) (picture 2).
- Finely dice the celery and slice the spring onion (picture 3).
- In a bowl, mix the shredded chicken with 200g (7oz) of cream cheese, 1 tsp of onion powder, 3 tbsp of Frank’s Red Hot Original, spring onion, celery. Taste and season with salt to taste (pictures 4 and 5).
- Spread 1/2 of the chicken mix on a tortilla wrap, making sure to evenly cover the whole surface (picture 6).
- Crumble 1/2 of the blue cheese over 1/2 of the tortilla (picture 7).
- Tightly roll the tortilla on itself (picture 8 and 9). Wrap in cling film and repeat with the second tortilla (picture 10).
- Rest in the fridge for 2h.
- Slice the tortillas into about 2cm slices (3/4in).
- Serve immediately or cover with cling film and refrigerate for later.
