Hearty grilled cheese brightened up by a spicy green chutney. The filling is made of creamy mashed potatoes topped with gooey cheese. A spicy green chutney cuts through the richness. Hacks to save time and effort can be found in the substitution section.

Ingredients
Core ingredients
- 200g of potatoes, boiled and mashed
- 1tsp of curry powder
- Salt
- 1/4 onion, finely diced
- 4 tbsp of green chutney
- 70g (2.5oz) of shredded mozzarella
- 4 slices of bread
- Butter
Green chutney
You can also use store bought chutney
- 1 green chili (optional)
- 1/4 cup of fresh coriander / cilantro (including the stem)
- 1 tbsp of fresh mint
- 1/2 thumb of ginger, grated
- 1/2 tsp of ginger-garlic paste (optional)
- 1/4 tsp of garam masala
- 1/4 tsp of cumin powder
- pinch of salt

Method
Make the mashed potatoes
- Place the potatoes in a cold saucepan, cover with water and add a big pinch of salt. Place on high heat and bring to a boil.
- Boil for 15 to 30min (depending on the size of the potatoes). The potatoes are ready when fork tender (the fork goes in easily and the potato slides off it when lifting it out of the water).
- Whilst the potatoes are cooking, thinly dice 1/4 onion.
- Once ready, drain the potatoes, peel and mash.
- Add the diced onion, 1 to 1.5 tsp of curry powder and season with salt. Mix and adjust seasoning to taste.
Make the chutney (whilst the potatoes are boiling)
- Add all the green chutney ingredients to a blender and blend with a dash of water (just enough to blend) – green chili, coriander, mint, ginger, ginger-garlic paste, garam masala, cumin, salt.
Assemble and cook
- Spread 1 tbsp of green chutney on each slice of bread (picture 1).
- Add a layer of seasoned mashed potatoes, dividing evenly between the 2 sandwiches (picture 2).
- Top with shredded mozzarella (picture 3).
- Close the sandwich (you will have in each, 2 slices of toast with chutney, mashed potato and mozzarella) (picture 3).
- Butter the outer slices of the sandwich (picture 4).
- Place in a cold pan and cook over medium heat. For the best result cook covered with a lid for about 10min or until the bottom slice is golden. Flip and cook uncovered for another 10min or until the bottom slice is golden.
