Easy fish sandwich. Crispy and creamy with a nice brininess, this sandwich has it all. All you need to do is make the tartar sauce, cook the fish to package instructions and assemble.

Ingredients
- 2 portions of pre-crumbed white fish
- 4 tbsp of mayonnaise
- 4 cornichons, fine diced
- 1 tbsp capers, chopped
- 2 sprigs of dill, chopped
- 2 bread rolls
- Salt (optional)

Method
- Cook the fish according to packet instructions.
- Whilst the fish is cooking, prepare the tartar sauce (pictures 1 and 2):
- In a bowl add 4 tbsp of mayonnaise
- Finely dice 4 cornichons, add to the mayonnaise
- Chop 1 tbsp of capers, add to the mayonnaise
- Chop 2 sprigs of dill, add to the mayonnaise
- Mix, taste and add a pinch of salt is needed. I usually forego the salt as capers are already quite salty.
- Rest until your fish is ready.
- Once your fish is ready, assemble your sandwich splitting the tartar sauce between the two sandwiches (picture 3).
