Spinach salad, with feta, apple, pistachios & cranberries

This is my husband’s second favourite salad of all time. Fresh spinach are lifted by sweet apple and cranberries, salty feta and crunchy pistachios. A real summer treat.

Ingredients

Base

  • 7oz of fresh spinach leaves (200g)
  • 1/2 cup of shelled pistachios (~40g)
  • 1/2 cup of crumbled feta (~60 to 70g)
  • 1/4 cup of dried cranberries (~30g)
  • 1 small apple

Dressing

Method

  1. Optional: toast the pistachios to bring out all their flavours. In a cold dry pan add 1/2 a cup of shelled pistachios and toast over medium heat.
  2. Cut one small apple into matchsticks.
  3. Assemble the salad: 7oz of spinach, 1/2 cup of pistachios, 1/2 of crumbled feta, 1/4 cup of dried cranberries and the apples.
  4. Dress with your choice of balsamic vinaigrette or ranch dressing.
  5. Enjoy!
