Banana Oat Pancakes

Easy banana oat pancakes. Just add all the ingredients to a blender and blend. Perfect served with strained (or normal) Greek yogurt and jam for a “scone” vibe. The pancakes freeze great for later use. Just microwave before serving.

Ingredients

  • 1.5 cup of oats
  • 1/2 cup of milk (I like almond milk)
  • 2 ripe bananas (the more black spots the sweeter)
  • 2 eggs
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp honey
  • Oil to cook

Method

  1. Add all of the pancake ingredients to a blender and blend: 1.5 cup of oats, 1/2 cup almond milk, 2 ripe bananas, 2 eggs, 2 tsp baking powder, 1/4 tsp salt, 2 tsp honey.
  2. Pre-heat a saucepan with a dash of oil.
  3. Cook the pancakes: cook the pancakes over medium high heat. Use about 2 tbsp of mixture per pancake, work in batches if needed. Cook on one side until just over half of the pancake looks set (about 2min), flip and cook another minute or 2 on the other side.
  4. Enjoy!

Substitutions

For extra flavour you can add vanilla extract or dried spices such as cinnamon or pumpkin spices.
