I am a fan of the soft and chewy texture of rice paper rolls (think summer rolls, rouleaux de printemps…). I have been using them to make handheld salads for years — and yes often for breakfast from fridge leftover… don’t judge! The logic is always the same: wet your rice paper, top with your salad ingredients and dressing, roll and ENJOY!
Below are some of the combinations I frequently make but anything goes, you could even make sweet combinations (banana, peanut butter and chocolate? strawberries and cream?)
