Senegalese-inspired bean sandwich

Beans and bread have never been so interesting! This Senegalese-inspired breakfast sandwich packs an incredible depth of flavour for such a simple list of ingredients — even without the hot sauce! The bean filling is so rich and moreish, while the cucumber adds just the right amount of crunch to freshen everything up. It is also highly customisable with whatever you have in your fridge or pantry. Truth be told: I realised I did not have onions when I first made it, and had to sub them for peppers in this recipe. It turned out to be a happy mistake!
