Rice paper roll salads (for inspiration)

I am a fan of the soft and chewy texture of rice paper rolls (think summer rolls, rouleaux de printemps…). I have been using them to make snacks and handheld salads for years — and yes often for breakfast from fridge leftover… don’t judge! The logic is always the same: wet your rice paper, top with your salad ingredients and dressing, roll like a burrito and ENJOY!

The fillings are endless, just think of whatever lunch you want to take with you and hoped you could hold by hand. You can add the dressing inside the roll, or keep it as a dip on the outside.

Below are some of the combinations I frequently make but anything goes, you could even make sweet combinations (banana, peanut butter and chocolate? strawberries and cream?)
