Avocado, Feta, Sriracha Toast

Simple and healthy toast for breakfast, brunch or a light lunch.

Ingredients

  • 2 to 4 bread slices (depending on size)
  • 2 avocados, mashed
  • 1 lime, juiced
  • Salt
  • Sriracha
  • 70g feta, crumbled
  • Coriander (optional)

Method

  1. Toast the bread slices (4 small or 2 big).
  2. Open, core and peel 2 avocados. Place in a bowl.
  3. Add a generous pinch of salt and the juice of 1 lime.
  4. Mash, taste and adjust seasoning.
  5. Top each slice of toast with mashed avocado and a drizzle of sriracha.
  6. Divide the crumbled feta across the slices.
  7. If using, add coriander.
  8. Enjoy!
