Great brunch recipe with vibrant Mexican flavours. Grab a tortilla (I tend to go for whole wheat ones but any will do), eggs and add the toppings of your liking. Here made with refried beans, pico de gallo, avocado and toped with hot sauce.

Ingredients
- 2 tortillas
- 4 eggs, fried
- Refried beans (homemade or shop bought)
- 1 ripe avocado, sliced lengthwise
- Pico de gallo or salsa
- Salt
- Hot sauce to serve (optional)
Method
- Heat your tortillas in a hot pan, 1 or 2 minutes per side (you can also use your microwave or oven).
- Fry eggs to your liking, about 5min in a pan over medium heat for sunny side up eggs. Don’t forget to season your eggs with a pinch of salt.
- Reheat refried beans (microwave will do just fine).
- Slice avocado into strips.
- Assemble: spread refried beans over tortilla, top with 2 eggs per tortilla, 1/2 avocado per tortilla, pico de gallo and hot sauce.
