If you have ever been to Madrid you may have swung by Rodilla for a sandwich (my favourite for a 10am snack to tie me over until the late lunch). Their blue cheese, raisin and roquette sandwich is iconic (slightly adapted in this recipe). This easy sandwich is perfect for a mid morning or afternoon snack or even lunch (ideally then combined with a range of other sandwich flavours for a little tasting menu).
Recipe
Makes: 3 small sandwiches | Time: 5 to 10 min
Ingredients
- 50g blue cheese
- 50g cream cheese
- 1 spring onion, greens only, sliced
- 1 tbsp raisins
- sliced bread

Method
- In a bowl mix blue cheese and cream cheese until well combined.
- Chop spring onion.
- Add spring onion and raisins to the cheese mix. Combine well.
- If needed (optional): cut the crust off the bread and cut the bread into squares.
- Make the sandwich: spread the cheese filling on a slice of bread, top with another slice. If you want cut into triangle across the bias for the true Rodilla experience!
