Warm Goat Cheese & Bacon Salad

Savoury salad, with sweet apple and honey notes. Ideal as a starter or for a light main (in which case I recommend serving 5 goat cheese toast per plate).

Ingredients

  • 5 to 6 slices of bacon
  • ~1/2 a 180g (6oz) log of goat cheese, cut into 6 slices of ~1cm (1/2in)
  • 1/4 baguette, 6*1 cm (~1/2in) slices
  • 1/2 apple, julienned
  • 1 bag of salad (75g | 2.5oz)
  • Honey
  • Balsamic glaze

Method

  1. Pan fry the bacon until crispy (picture 1): place the bacon strips in a cold non-stick pan. Cook over medium heat until the bottom turns a nice brown colour. Flip and cook until the bacon is evenly browned. The process should take around 5min. Remove the bacon from the pan and onto a clean paper towel. Save for later.
  2. Prepare the goat cheese croutons:
    • Slice the baguette into 6 circular 1cm thick slices (~1/2 in).
    • Cut goat cheese into 6 circular 1cm thick slices (~1/2 in).
    • Top each baguette slice with a slice of goat cheese (picture 1).
    • Place on a lined baking sheet and broil for up to 5min (place under the oven grill). All grills are different, keep an eye on it to avoid burning the bread. The bread should be lightly toasted and the goat cheese warm and melty.
    • Remove from the oven and top each crouton with a smal drizzle of honey.
  3. Prepare the rest of the ingredients and assemble:
    • Cut the apple in half and julienne one half (cut into matchsticks – picture 1). You can snack on the remaining half.
    • If needed clean the lettuce.
    • Distribute the lettuce and sliced apples evenly across two plates. Crumble the bacon oven each plate. Drizzle with balsamic glaze (picture 2).
    • Top with 3 croutons each.
  4. Enjoy!
