Tomato & Olive Tapenade Tart

Easy summer recipe with sweet cherry tomatoes

Delicious summer lunch ready in under 30min and with only 5 ingredients (+ oil salt and pepper). A buttery tart shell, is topped with a thin layer of salty olive tapenade and sweet cherry tomatoes that burst in the mouth as bite into the warm tart.

Serves: 2 (4 with sides) | Filling for a 22cm ø tart | Time: 30 min

Ingredients

  • Shortcrust pastry (uses 1/2 a pastry)
  • 600g cherry tomatoes (1.3lb)
  • 1/4 cup black olive tapenade or vegetarian olive spread
  • 1/2 tsp powdered sugar
  • Olive oil
  • Salt
  • Pepper
  • Basil (optional)

Method

Blind bake the dough

  1. Pre-heat oven to 180°C (350°F) – convection oven.
  2. Roll out the dough on a floured work surface. Place the dough in pie mould. Tuck it in with your fingers, making sure it is completely smooth.
  3. Line the pie crust with baking paper. Fill with pie weights or dried beans. You can also “dock” the crust by making dents across the base with a fork.
  4. Bake until golden and fully cooked (about 20 to 25min).

Cook the tomatoes (whilst the dough is baking)

  1. Rinse tomatoes.
  2. Heat 1 tbsp of olive oil in a pan over medium heat.
  3. Add tomatoes and season with a pinch of salt and pepper.
  4. Slowly cook tomatoes for 15min, stirring them gently to avoid smashing them. It is ok if the skins tears a little bit but it should not brown.

Assemble and finish cooking

  1. Once the dough is ready, take it out of the oven and layer tapenade evenly across the bottom.
  2. Top with tightly packed cooked tomatoes (picture 1 below). The tomatoes will have rendered juices during their cooking, do not add those juices to the tart it will dilute the tapenade and make for a sloppy tart.
  3. Sprinkle the tart with powdered sugar (picture 2 below).
  4. Cook 4 to 5 min under the broiler/ grill.
  5. Top with a few basil leaves and enjoy the tart! – Caution if you serve immediately the tomatoes may be quite hot, it is worth letting the tart cool a few minutes.
