Fajitas

Quick recipe for when you have limited time but want a flavour punch.

Serves: 2 | Time: 15 min

Ingredients

Base

  • 6 fajita wraps
  • 1 onion
  • 1 bell pepper (or 2 halves of different colours)
  • 1 chicken breast, cut into strips
  • Oil

Seasoning

  • 1/2 tbsp of corn starch
  • 1 tsp of cayenne pepper
  • 1/2 tsp of smoked paprika
  • 1/2 tsp of white sugar
  • 1/2 tsp of salt
  • 1/4 tsp of onion powder
  • 1/4 tsp of garlic powder
  • 1/4 tsp of ground cumin

Sides: grated cheese, sour cream, salsa, guacamole.

Method

  1. Mix all the seasoning ingredients together: 1/2 tbsp of corn starch, 1 tsp of cayenne pepper, 1/2 tsp of smoked paprika, 1/2 tsp of white sugar, 1/2 tsp of salt, 1/4 tsp of onion powder, 1/4 tsp of garlic powder and 1/4 tsp of cumin.
  2. Cut your ingredients:
    • Slice the onion.
    • Cut the bell pepper into strips.
    • Cut the chicken into thin strips.
  3. Heat a pan over medium heat with a dash of oil and add the onion. Sauté for a couple of minutes to soften.
  4. Turn the heat up to medium high, add the bell peppers and sauté for another minute.
  5. Add the chicken, sauté a minute to just start the cooking. Add the spices and cook until the chicken is fully cooked through.
  6. Serve with tortilla wraps, sour cream (or Greek yogurt), salsa, shredded cheese and guacamole.
  7. Enjoy!
