Pimento Cheese

Lightly sweet and spicy cream cheese dip from the southern United States. Perfect addition to your aperitifs, BBQ or picnics. Serve as a dip with crackers or in a sandwich. Great as make ahead dish as the flavours will further infuse with time.

Ingredients

  • 130 g (4.5 oz) of extra-sharp cheddar cheese, shredded
  • 200 to 220g (8oz) cream cheese, softened
  • 1/4 cup mayonnaise (~60g)
  • 1 (4oz) jar pimentos, drained & diced
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp cayenne pepper (optional)
  • Salt, to taste
  • Black pepper, to taste

Method

  1. Shred cheddar.
  2. Drain and dice pimentos.
  3. Mix all ingredients together until well combined (cheddar, cream cheese, pimento, garlic powder, onion powder, cayenne pepper, salt, pepper). Taste and adjust seasoning.
  4. Serve immediately or rest 1 (or more) to let the flavours infuse.
  5. Enjoy with crackers and a nice cold drink.
